Kale Salad With Creamy Poppy Seed Dressing
|1/4 cup mayonnaise (try light)||4 C coarsely chopped kale, any tough stems removed|
|2 Tbsp cider vinegar||2 C matchstick-cut peeled broccoli stems or broccoli slaw|
|1 Tbsp extra virgin olive oil||2 C thinly sliced trimmed Brussels sprouts (8 ounces)|
|1 tsp poppy seeds||1/2 C sliced red cabbage|
|1 tsp sugar or honey||3 Tbsp dried cranberries|
|1/4 tsp salt||3 Tbsp toasted pumpkin seeds|
|1/4 tsp ground pepper|
1. Whisk mayonnaise, vinegar, oil, poppy seeds, sugar (or honey), salt and pepper in a large bowl. Add kale, broccoli stems (or slaw), Brussels sprouts, red cabbage, cranberries and pumpkin seeds; toss until well coated with the dressing.
Prepared and Ready in 25 min! Add meat or beans for more protein.
